Sheepshead (Archosargus probatocephalus, family Sparidae, Figure I) is an excellent food fish ranging from Nova Scotia to Brazil in mainland coastal waters, rivers, and freshwater springs. Maximum size is more than 14 kg and 80 cm. In theUnited States it is not a targeted species and has limited commercial availability, but sometimes sheepshead is substituted for red snapper and other more expensive fish in restaurants.
